“Car Bomb” refers to a process known as carbonic maceration. It’s unusual for this technique to be used with Chardonnay, but hey, that’s Brendon’s typically left-field thinking when it comes to wine. A fun game with this wine is Guess the Grape. Punchy, blossom-like aromatics that are clean and vibrant and evolve in the glass, taking you on a sensory journey. Far zippier – more like an aromatic white – on the palate, but it screams Chardonnay with its energy and mid-palate creaminess. Beautiful!
